Cupcakes or bust......

Well, today I did not bake anything! It's crazy, since I have been on a baking mission since Saturday. This is my first blog so let me back track a bit. As I was planning my twin girls 1st birthday party, I started thinking about smash cakes, cupcakes, favors, decorations, etc. etc.  After contacting several "cake ladies" it just came to me.... Why not try to make my own cupcakes and save money? Well, I had the best intentions, however, it has already cost me the price of 6 dozen cupcakes trying to find the right ingredients:( Not to mention the beautiful new and EXPENSIVE Kitchenaid mixer.

Day 1 I baked 3 different kinds of cupcakes and only liked one of them. But I have to say, the 3rd one, which was a chocolate, chocolate chip cupcake was delicious! So that one is a keeper. The other 2 were another plain chocolate and a strawberry vanilla, they were not good. I also made a peanut butter mousse filling, which I also used as icing and it was fabulous! We have a winner for the party. Chocolate, chocolate chip with peanut butter mousse icing.

Day 2 I made 2 types of buttercream icing recipes I found online and they were horrible! I was really going to just give up and buy store bought icing. The first recipe had giant lumps of sugar that just wouldn't go away no matter how much I beat them. The 2nd one was so sweet that it made my lips pucker. I gave up that day.

Day 3 I decided to make a sugar cookie recipe and try my hand at cutouts and royal icing. Boy I was soooo excited about doing this. I hadn't been that excited for a long time. I was already picturing making cookies and decorating them for resale. Putting them on sticks and making cookie bouquets. I was thinking about names for my cookie business and how much I would sell them for. Wow, was I jumping the gun. Although the cookies were not to terrible, it turns out there is definitely a learning curve to making royal icing and decorating the cookies with it. I tried several royal icing recipes and none of them were any good. I gave up once again.

Day 4 I wanted to try icing one more time and it wasn't bad, see above pic. I watched many you tube videos on how to ice the cookies and did lots of research. I thought I was ready to go! Boy, once again I was wrong. I did manage to "flood" the cookies pretty well but decorating using cake tips was harder then they make it look. Needless to say, I am no longer interested in cookies, so I'm moving on to cupcakes full time!

Day 5 a friend of mine came over and tried my sugar cookies. When I asked her how they tasted, her reply was "it's not the best I have tasted". I will take that as a hint. After my friend left, I decided to try my skills at making a wonderful tasting vanilla cupcake. Eureka! I did it on my first try. They tasted great. I also tried my hand again at making another buttercream icing recipe and it really tasted good. My husband took them to work to be evaluated by his co-workers and I got a text today that read "cupcakes were a hit". YAY!

Which leads me to today...... Although I didn't bake anything, I did a lot of research on my next cupcake creation. Now my research took me to a place I never thought I would go, the world of cake pops! Also known as cupcake pops, or cake bites on a stick dipped in chocolate! What could be better then a cupcake dipped in chocolate on a stick?? NOTHING! I am already chomping at the bit to make these little creations, so tomorrow may be the day. I'm getting so many ideas that my brain cannot keep up. Once again, I'm thinking about my company name, how much I will sell them for etc. etc. Let's hope that  the cake pops don't turn out like my cookie idea.....
